I found this healthy summer side dish an an old Weight Watchers cookbook. Give it a try. It was really tasty!
CLASSIC FOUR-BEAN SALAD
1 cup thawed frozen lima beans
1 cup canned red kidney beans, rinsed and drained
1 cup canned chickpeas, rinsed and drained
1 cup canned black beans, rinsed and drained
1 celery stalk, diagonally sliced
1/2 red onion, finely chopped
1 red bell pepper, seeded and diced
1/4 cup fat-free creamy peppercorn ranch salad dressing
1/4 teaspoon coarsely ground black pepper
In a large bowl, combine all of the ingredients. Refrigerate, covered, until the flavors are blended, at least 1 hour. (Makes 6 servings)
